Three Great Camping Recipes from Burnt Marshmallows

banana_boatI just came across a delicious post by Mel N at Burnt Marshmellaws, an online community for campers. Mel kicks off the camping season with three new recipes he’s looking to try out:

Banana Boats

Slit the entire banana down the center lengthwise but not all the way through, peel it open a bit and stuff it with peanut butter and come chocolate chips.  Close it and wrap with tin foil good.  Put on some hot coals until nice and goey.  Grab a spoon, and enjoy!!

Carmel Apples

Partially core and apple, fill center with a pat of butter and a few individually wrapped caramels.  Wrap in tin foil and heat over the fire.  It will be a new family favourite!

Grilled asparagus

Double up some tin foil to avoid leaking, lay some asparagus with the woody parts removed, drizzle with olive oil and cook until just tender.  Put a little bit of lemon juice and some parma.  That’s it!

All sound great – and there’s nothing better than an unexpected desert in the middle of a canoe trip! Anyone else have some recipes to share?
